There’s a substantial diner in my neighborhood that is known around the country.
They go back multiple generations to the undoubtedly same location that was opened in the 1940s.
I don’t guess they’ve changed their dough & sauce recipes even once in the time since. Although I enjoy eating at this diner—especially for it’s vibe & general sense of ambience—it’s typically packed full of patrons. Getting a table can result in an hour long wait if you try to eat between 7pm & 10pm, while the people I was with and I were in their peak hours. They have delivery drivers, however a delivery order often takes as long to receive as it does to wait for a table at the diner itself. The last time I decided to visit the diner in person, I noticed how comfortably cool it felt inside the family room. Usually it was typically moderate or hot inside the diner because of their insanely hot granite ovens. I l earned that their management had decided to buy a substantial chiller to replace the old a/c. These commercial sized cooling machines toil at much higher capacities than traditional a/cs. And because of their capacity, you can use them to cool hot machinery, such as ovens & stove tops. For a substantial diner, this is a perfect solution to replace insufficient air conditioner. They also have a special ventilation system that lets out steam from inside the home office so it doesn’t leak into the family room. It’s almost worth it to wait an hour to get a table now that it’s so comfortable inside the diner. Since the people I was with and I live in the south, there really isn’t a need for a substantial heating system or boiler to compliment the chiller.
